I routinely watch the World Poker Tour on the Travel Channel. I'm not going to argue your facts, but some of your conclusions seem a little off. From my point of view, there are some online newbies and amateurs that make it to the final table. On average, not so many.
I don't think you can just force substitute the game theory on top of the gameplay without factoring in the social element. That's one reason I don't play online (I haven't played in the casinos either btw). In person I could upset a table with my rudeness, humor, wit, etc. I'm pretty sure it would be an invaluable tool in my playing arsenal. More than once I've seen players go 'on tilt' against a player they don't like just to put him out.
