Fake can be just as good.
Here in San Francisco there are a number of Vietnamese inspired or "modern" Vietnamese restaurants that some Vietnamese-Americans pooh pooh. But as a child of Vietnamese immigrants myself, I just appreciate it for what it is. It might not be exactly "what Mom used to make" but there are similarities. A lot of the difference lies in the presentation and the use of certain ingredients, and often what's offered on the menu tends to accommodate American tastes and tradition. Nothing wrong with that. What annoys me about all this is the people who reject food solely on the basis of a lack of authenticity, whatever that is. Inauthentic food can taste fine and good just like anything else.
