Evolution takes place over many generations of an organism's lifetime. The only evolution a single human would be able to observe would be evolution of an organism with a very short lifespan.

Like a bacteria. There have been many observable and documentable example of bacteria gaining immunity to antibiotics. Stuff like that.

But no predator of a size large enough to threaten a human could evolve from a single-celled animal in the relatively short span of years that a human could survive.
